Effortless 3-Ingredient Egg Fried Rice

This has become my favorite shortcut for a tasty fried rice. With just three ingredients, you’re good to go.

Ingredients (serves 2):

  • 2 cups of cooked white rice
  • 4 eggs
  • 1/2 cup of vegetables

You can essentially incorporate a variety of vegetables like peas, carrots, corn, or even finely diced green onions. The crucial thing is to select vegetables that won’t exude much moisture during cooking.

Instructions

For this recipe, I’ve opted to use chopped long beans as my vegetable choice.

  1. A crucial aspect of fried rice is preparation. Ensure all ingredients are ready and within reach before you begin.

  2. Whisk the 4 eggs in a bowl.

  3. Place your frying pan on the stove and heat a tablespoon of oil on high. Once hot, add the whisked eggs, stirring until they’re nearly firm. Introduce the rice, seasoning with 1/2 teaspoon of salt, and mix continuously for around a minute.

  4. Add the vegetables to the pan. Keep stirring on high heat for an additional couple of minutes. Sample your fried rice to check if additional seasoning is needed. In mine, I drizzled in some more soy sauce.

  5. Continue frying until the vegetables are tender. You can taste them to ensure they’re cooked. Once done, remove the pan from the heat and serve immediately.

Tips:

  • For optimal results, utilize day-old rice. Newly cooked rice tends to be overly moist and sticky.
  • Feel free to introduce other flavors like soy sauce, sesame oil, or chili flakes.
  • If you have garnishes on hand, feel free to incorporate them as well.
